The ingredients needed to make Ratatouille:
  1. Make ready 1 large onion, finely diced
  2. Get 1 large courgette, diced
  3. Take 1 celery stalk, thinly sliced
  4. Take 2 cans tin tomatoes
  5. Make ready 2 tbsp olive oil
  6. Prepare 100 ml water
  7. Take 1 tbsp garlic paste
  8. Get 1 tbsp mixed herbs
  9. Get 1 Green bell pepper, finely chopped
  10. Get Pinch salt to taste
  11. Take as needed Grated parmesan cheese,
  12. Make ready 1 tsp soft brown sugar
Steps to make Ratatouille:
  1. Heat the olive oil in a wok or deep frying pan.
  2. Add the onion and bell pepper. Cook through until onion is soft.
  3. Next add the courgette and celery. Cook for another 5-8 minutes, stirring often so it doesn't stick or burn. If using season with salt and pepper.
  4. Add the tomatoes, garlic paste, herbs and sugar. If using season with salt and pepper. Reduce heat to low.
  5. Allow to simmer for 35-45 minutes over a low heat. Stir occasionally.
  6. This will make a large batch so it can be frozen once its cooled completely.
  7. Serve with grated parmesan over the top.
